Ingredients
- 2 grilled Chicken Breasts chilled
- 6 cups Mixed Baby Greens
- 1/2 cup Red Seedless Grapes cut in 1/2
- 1 Granny Smith Apple (peeled, if you like), cored and chopped in bite-sized pieces
- 1/2 cup Celery diced
- 1/2 cup Candied Walnuts
- 1 cup Crumbled Gorgonzola
- California Pizza Kitchen Waldorf Chicken Salad Dressing (Recipe Below)
Instructions
Prepare California Pizza Kitchen Waldorf Chicken Salad Dressing according to recipe below. Set aside.
Slice chicken breasts thinly. Set aside.
In a large mixing bowl, add field greens, grapes, apple and celery. Toss to combine. (Add this point, you can store the salad, along with the dressing and chicken, in the refrigerator until ready to serve. Continue with preparation below just before serving.)
Pour in a about 1/2 cup dressing. Toss and mix to combine. Add more dressing, if desired, until you get a good covering.
Evenly divide mixed salad between 2 to 4 chilled plates.
Top with chicken breast slices.
Sprinkle on candied walnuts, and Gorgonzola, to taste.
Serve immediately.

- 1/2 cup Balsamic Vinegar
- 2 tablespoons Dijon Mustard
- 1 tablespoon Garlic minced
- 1/2 teaspoon freshly ground Black Pepper
- 1/4 teaspoon Salt
- 1 cup Olive Oil
Instructions
Place all ingredients in a medium bowl. Whisk well to combine.
Store in a tightly sealed container, in the refrigerator, to chill until ready to serve, up to 2 weeks. Shake or whisk prior to serving.
