Ohmygerd, it’s the best thing since sliced bread.

No, wait…sliced bread is bad; it’s the best thing since my Snickerdoodle recipe!

Holy Cow, can I say this recipe is out of this world?

I freaking love coffee cake, like LOVE IT!

So I was gearing up to be slightly disappointed.

I mean, you know how it goes.

There is a food you adored before going low carb, and you try the keto version of it, and even though it hits the spot, it’s just.not.the.same.

Yeah, I’m right there with ya.

I get it!

I made this for that Keto Valentine’s Day party I talked about in the last post.

Since the party’s focus was on coffee, I knew I had to make a coffee cake, and since the coffee was of the cupcake variety, I knew I had to make cupcakes.

So basically, I’m the like the mouse, the moose, and the pig from those children’s books.

You know, if you give a ______ a _______, he’ll want to _______.

Yeah, that pretty much sums up my life.

So anyway, I went to the kitchen to bake up a less awesome version of the coffee cakes I know and love.

We tasted it, and it was divine.

Sure, it’s a traditional coffee cake in the sense that it will make me fat and depressed, but it is a keto coffee cake that will keep me slim and happy, so that’s good.

Right?

Right?

My husband and children all agreed that I rocked the socks off of this dessert, so there’s that!

Anywho, here’s the recipe. 🙂

Keto Coffee Cake:

Keto Coffee Cake: Ingredients

For The Cake:

4 Cups Almond Flour
11 Tbsp Butter
3 Eggs
2/3 Cup Unsweetened Almond Milk
1 1/3 Cup Erythritol (powdered)
1 Tbsp Baking Powder
1 1/2 Tsp Vanilla Extract
1 Tsp Liquid Stevia
1 Tsp Cinnamon
Dash of Salt

For The Cream Cheese Glaze:

  • 8 oz Cream Cheese
  • 1/4 Cup Unsweetened Almond Milk (Vanilla)
  • 1 Tsp Liquid Stevia

For The Cinnamon Glaze:

  • 8 Tbsp Butter
  • 1/4 Cup Erythritol
  • 1 small scooper Stevia
  • 1 Tsp Vanilla
  • 3 Tsp Cinnamon

Keto Coffee Cake: Directions

For The Cake:

  1. Preheat oven to 350
  2. Mix all ingredients together in a large mixing bowl until well combined
  3. Grease a bundt pan with coconut oil
  4. Cook for 50 – 60 minutes until golden brown (clean toothpick test)
  5. Allow cooling completely before removing from pan.

For Cream Cheese Glaze:

  1. Allow cream cheese to get to room temperature.
  2. Mix all ingredients together and pour over the cake (once cooled)

For Cinnamon Glaze:

  1. In a saucepan, mix all ingredients until melted (the butter and the cinnamon sugar mixture will separate)
  2. Once the glaze is ready, use a spoon over cream cheese to decorate your coffee cake with cinnamon glaze.
  3. It will be more like a goo than a glaze, but it is delicious
  4. Drizzle butter from the glaze over the cake lightly.

Note: This cake lasted about 4-5 days, and we just left it sitting on the counter (covered, of course), but you can always put it in the fridge.

Just make sure it’s covered to lock in the moisture.

Note: When I bake with Erythritol, I ALWAYS powder it by putting it in afood processor, we can’t use it any other way, or it just tastes gross. Just an FYI!
