As detailed before, I am not a breakfast person. In fact, I am an early bird. My mornings are out-of-control productive. It’s not that I choose not to eat breakfast – it’s just that I look up at the clock and it’s 11:00 and I’ve just forgotten.

This is very bad. Bad. Bad. I know. I can hear everyone in the world, including the little Cheerios bee character thing, telling me that it is the most important meal.

What I did realize is that I have no problem making a big mug of coffee and toting it around with me everywhere I go and sipping it throughout the morning.

So, I came up with a Paleo breakfast smoothie that would help me get my nutrients.

Then, I came up with a mid-morning snack. Mmmm, I love snack time! Especially a snack I can tote around!

It’s a paleo green smoothie.

Beau and I have tried one too many green smoothies. His response is usually, “Yum! Tastes just like yard work.” So, yeah. Not cool. Do not drink your yard work.

A few tweaks with one that is packed with nutrients and I have found my favorite tasting, go-to paleo green smoothie.

This helps put nutrients in my body but it also helps with my brain. Seeing as I am so overly productive in the morning, I tend to have burn out at work at about 3 or 4.

You should hear me in evening meetings. I’m usually like, “Um, what do you mean when you say this word, ‘Process.’ And what day is it? And how does one turn on a laptop?” You see what I am saying.

So, this smoothie also helps with my mind. A lot actually. It is brain food. And I can just stick a straw in it and cart it with me wherever I go. Sometimes I run out of cups and put it in a beer mug. Makes it a little bit more amusing. I know. Wild child.

Anyway, one paleo green smoothie, coming your way 😉

Paleo Green Smoothie Recipe

This smoothie has a lot of greens. Kale. Romaine lettuce. Celery. But it also has some citrus and fruit. Like lemons, apples, oranges and a banana.

Go ahead and place 1 1/2 cups coconut water and 1/2 cup coconut milk in your blender.

Why coconut water and milk? It takes away a touch of the rich flavors of the greens (which helps it be more delicious). It also adds a little creaminess and, as we have learned, coconut water is packed with hydrating electrolytes. If you don’t have coconut milk on hand, just use 2 cups coconut water. Or, if neither, just use two cups purified water.

To prep your greens, wash and dry them. Take the kale and remove the rib (the tough, large white vein going down the middle).

Then roughly chop the romaine lettuce, kale, and the celery stalks. Add them to the blender.

Prepare your fruit. Today I used an apple because it is what I had or hand but I HIGHLY recommend using a pear. It is delicious! Remove the seeds and core from your apple (or pear) and roughly chop half of it (save the other half for the next time you make a batch of paleo green smoothie goodness).

Peel the orange. Roughly chop half of it. Save the other half.

Juice half of a large lemon or a whole small lemon.

Add all of this to the blender as well.

I also like to add in 2 tablespoons of ground flax seed, to get my fiber in!

Blend until smooth. Serve over ice!

Ingredients

Scale

  • 1 1/2 cups coconut water
  • 1/2 cup coconut milk
  • 2 TBS ground flax seed (optional)
  • Juice of one small lemon (or 1/2 large lemon)
  • 1/2 apple (roughly chopped, seeds and core removed) OR 1 pear (roughly chopped, seeds removed)
  • 1/2 orange (peeled, roughly chopped)
  • 3 stalks of celery (roughly chopped)
  • 4 large kale leaves (ribs removed)
  • 4 romaine lettuce leaves
  • 1 banana
  • 1 cup ice

Instructions

  1. Add all ingredients to the blender. Blend until smooth. Serve over ice. Makes 3 servings.

Notes

Makes 4 3/4 cups or 38 oz. [br]Can store in refrigerator in an airtight container for up to two days.
